How To Make The Best Baked Macaroni and Cheese (3 Cheese Recipe)

Winning Recipe! I followed this baked macaroni and cheese recipe with Velveeta and made two pans for our community dinner. It took me a around two hours from start to finish because I was taking time out to watch my favorite football team. The baked mac and cheese looked delicious but the real test was seeing how people reacted.

I made two pans which I took to our community dinner and people didn’t know that I was the one that made the Baked Mac and Cheese. Several people told me that this was the best baked Mac and Cheese they had tasted. I watched several kids and adults go back for seconds. Not only did it taste great, the baked cheese on top gave it a great presentation. This recipe was a big hit!

Baked Macaroni & Cheese
Instructions
Macaroni
  1. Boil elbow macaroni per packaging instructions. (DO NOT ADD OIL OR BUTTER TO THE WATER)
Cheese Sauce
  1. In a sauce pan melt 2 tablespoons of butter
  2. Add 2 tablespoons of flour and whisk it to make a roux. Whisk for 2 minutes or until you get a doughy crumb consistency.
  3. Whisk in 1/3 cup of your milk until you get a smooth paste.
  4. Add the rest of your milk.
  5. Whisk the milk on high heat until it gets warm.
  6. Add Grounded Annatto until you get your desired color. (optional)
  7. Add 2 tsp of salt.
  8. Lower Heat.
  9. Slowly whisk in Velveta and 1/2 of the sharp cheddar cheese.
  10. Turn heat to medium and continue whisking until sauce reaches desired thickness.
  11. Pour cheese sauce over Macaroni and blend until macaroni is covered.
  12. Top with the remainder of Sharp Cheddar Cheese and a 1/3 Block of shredded Monterey jack.
Bake
  1. Bake covered with foil for 10 mins
  2. Take off the foil and bake for another 20 - 30 mins or until the top becomes golden brown
